In a large bowl, combine whole wheat flour, protein powder, coconut sugar, baking powder, and salt. Mix well.
In another bowl, whisk together almond milk, Greek yogurt, melted butter, eggs, and vanilla extract until smooth. Gradually add the wet ingredients to the dry ingredients, mixing until a dough forms.
Roll out the dough on a floured surface into a rectangle. Spread a mixture of cinnamon, sugar, and optional nuts/raisins evenly over the dough. Roll tightly into a log and slice into 12 equal pieces.
Place the rolls in a greased baking dish and let them rise for 30 minutes. Preheat the oven to 350°F (175°C).
Bake for 25-30 minutes or until golden brown. Allow to cool slightly before serving.
