In a large bowl, combine the ground turkey with soy sauce, Worcestershire sauce, hot sauce, garlic powder, onion powder, smoked paprika, black pepper, salt, and red pepper flakes. Mix well until all ingredients are thoroughly incorporated.
Spread the turkey mixture evenly onto a dehydrator tray or a baking sheet lined with parchment paper, about 1/4 inch thick. Use a spatula to smooth it out for even drying.
Dehydrate in a dehydrator at 160°F (70°C) for 4-6 hours, or bake in an oven at the lowest setting (around 170°F or 75°C) for 4-6 hours, until the jerky is dry and firm but still slightly pliable. Let it cool before slicing into strips.
