In a large mixing bowl, combine the high-protein flour, baking powder, and salt. Mix well.
Add the Greek yogurt, egg whites, almond milk, and honey (if using) to the dry ingredients. Stir until a dough forms.
Fold in the chia seeds and knead the dough on a floured surface for about 5 minutes until smooth.
Divide the dough into 6 equal pieces and shape each piece into a bagel by forming a ring. Place them on the prepared baking sheet.
Sprinkle sesame and poppy seeds on top of each bagel.
Bake in the preheated oven for 20-25 minutes or until golden brown.
