In a large mixing bowl, combine high-protein flour and salt. Make a well in the center and add the yeast mixture and olive oil. Mix until a dough forms.
Knead the dough on a floured surface for about 10 minutes until smooth and elastic. Place it in a greased bowl, cover, and let it rise in a warm place for 1 hour.
Preheat the oven to 425°F (220°C). Once the dough has risen, punch it down and spread it onto a greased baking sheet, creating dimples with your fingers.
Sprinkle grated Parmesan, dried rosemary, and sea salt over the top. Let it rest for another 20 minutes.
Bake in the preheated oven for 20-25 minutes until golden brown. Remove and let cool slightly before garnishing with fresh parsley.
